A cold turkey salad

Writing the last post made me a little hungry for turkey and with the festive season in full swing I was needing a bit of a health kick, so I thought a salad would suffice.

It’s a bit of a stretch to call it a recipe as it’s really just a chuck it all on a plate affair, but it all goes together deliciously:

For two people, put a few handfuls of rocket on a serving plate, tear up some bits of turkey and some sundried tomatoes.  Crumble over about 50g of goats cheese and scatter over some pistachios.

For the dressing mix a teaspoon of wholegrain mustard with a tablespoon of balsamic vinegar, two tablespoons of extra virgin olive oil and a pinch each of salt, pepper and sugar.  Drizzle this over the salad and eat!
