Pesto is one of the best ways of using up leftover rocket or pretty much any leafy herb. You can add whatever nut you have to hand and then beyond that it’s just a matter of some parmesan or pecorino, some extra-virgin olive oil and a bit of seasoning. It’s so simple, takes seconds (if you have a food processor) and is pretty versatile – eat it with fish / pasta / chicken / risotto, whatever takes your fancy.
Here’s the recipe for the pesto I just made, but it’s really a matter of adjusting and tweaking to your liking:
Blitz together 60g rocket, 50g toasted hazelnuts, 30g grated parmesan, 1 chopped garlic clove, 8 tablespoons extra virgin olive oil and a squeeze of lemon juice. Taste, season and blitz briefly again. Store in a jar and keep in the fridge.
